Interovic will be at the Gastronomic Forum Barcelona from November 2 to 4 with live cooking and two winners of the Best Paquito in Catalonia contest.
Interovic will participate from November 2 to 4 at the Gastronomic Forum Barcelona with a stand focused on lamb. This is reported by Eurocarne, which details that the interprofessional will feature live cooking, the butchering of a carcass, and its lamb sandwich, the Paquito, as a major attraction.
The stand will be located in pavilion 1, level 0, street B, stand 80. From there, the Agro-Food Interprofessional of Sheep and Goat aims to show that this meat is suitable for today’s cuisine and not just reserved for special occasions.
“We want to demonstrate that lamb has a lot to offer to contemporary cooking and that you don’t need to wait for a special celebration to enjoy it”
So says Tomás Rodríguez from Interovic, who adds that proposals like the Paquito bring the meat closer to new audiences.
The fair will feature the winners of the last two editions of the Best Paquito in Catalonia contest. On November 2, Contracorrent (2026) will present its Iris Paquito, a Sicilian bun filled with a stew of milk-fed lamb with a mixture of anchovy, parsley, and garlic. This creation will compete for the Innoforum Awards as the most innovative and sustainable product.
On November 3, it will be Reversible’s turn (2025), which will serve a low-temperature shoulder Paquito with hanging tomato chutney and Prat artichoke mayonnaise. Both Paquitos will be available for tasting at 12:30 and 14:00.
Throughout the three days, Antonio González, head of R&D at Interovic, will cook Russian salad with lamb, sheep tartare, and a different Paquito each day. Master butcher Yolanda Casternado will butcher a carcass each day, and the cuts will be displayed in the stand's showcase.
The interprofessional also highlights the environmental role of sheep farming within its European campaign “Celebrate the Everyday with Lamb”. According to Interovic, over 110,000 sheep farms and 75,000 goat farms in rural areas help to preserve the landscape, improve soil fertility, and promote biodiversity.
